Chicken a la Crescents

This is the dish I made that contains chopped up mushrooms, among other things, wrapped into a crescent roll. Everyone liked it, even though many of you (I now know) don't care for mushrooms! So I guess I lucked out.

1/2 cup stuffing mix, finely crushed
3 oz. cream cheese softened
2 TBS butter, softened
1/2 tsp. lemon pepper
1 cup cooked chicken, chopped (approx. 2 breasts)
1/2 cup mushrooms, chopped, drained
1 (8 oz) can crescent rolls
3 TBS butter

In bowl, cream together cream cheese, 2 TBS butter, and lemon pepper. Stir in chicken and mushrooms. Put stuffing mix in small bowl. Melt 3 TBS butter in another small bowl. Roll 1/8 of chicken mixture into ball and wrap 1 crescent roll around it, sealing edges well. Dip ball in butter then lightly roll in stuffing mix. Place on ungreased baking sheet and bake at 375 for 20-30 minutes or until lightly browned. Makes 8.

Hint- use food processor to finely chop chicken and mushrooms. Then you can really pull the wool over people who say they don't like mushrooms.

Hey, thanks for posting this one - believe it or not, I was going to ask you to! I've been trying to think of all the recipes that I would like to see and that was one of them.
