Garlic-Zucchini Orzo


1/2 pound orzo pasta
1/2 cup parmesan cheese, grated
1-2 zucchini
3 garlic cloves
1 yellow onion
Lemon zest
Parsley, chopped
Salt and Pepper

Chop as much onion as desired and slice the zucchini into thin disks. Finely chop the garlic cloves. Drizzle some olive oil (about 2 T) into a saucepan and heat on medium-high. Add the garlic, onion and zucchini and cook for about 10 minutes.

Cook orzo according to package directions (al dente is best) with salted water. Drain pasta and add the vegetable mixture to the orzo. Then add the parmesan cheese, lemon zest (to taste), salt, pepper and parsley.
