Pimento Cheese Dip

Here is the cheese dip recipe I made for Christina's shower over at Stephanie's house...

1 1/2 C Shredded Sharp Cheddar Cheese
1/2 - 3/4 C Shredded Monterrey Jack Cheese
1/2 C Sour Cream
1/4 C Butter (softened)

2 Green Onions chopped
1 Jar (2 oz.) Diced Pimentos drained (Jalapeno pimentos, if you can find them)
2 Tablespoons Chopped Green Chiles (can)
Chopped Jalapeno to taste and heat desired

Beat with electric mixer the first 4 ingredients until combined. Stir in remaining ingredients. Cover and chill. Jalapeno heat will get stronger the longer mixture sits together.

Serve with crackers or chips. I used the Pepperidge Farm fancy wheat crackers.
