Apple Pie

1 recipe for a 9 inch double crust pie pastry
1/2 cup unsalted butter
3 TBS all purpose flour
1/2 cup white sugar
1/2 cup brown sugar
1/4 cup water
8 granny smith apples, peeled, cored, and sliced

Melt butter in sauce pan. Stir in flour to form paste. Add white sugar, brown sugar, and water. Bring to boil, reduce heat and simmer 5 minutes. Meanwhile, place bottom crust in your pie pan. Fill with apples, mounded slightly in center. Cover with lattice work of crust. Gently pour sugar and butter mixture over the crust. Pour slowly so it doesn't run off. Place on baking sheet and bake at 350 degrees for about an hour.
