COOKIES
3/4 cup butter1/2 cup sugar
1 egg yolk
1 tsp. vanilla
2 cups flour
1 1/2 cups sweetened coconut flakes
1/2 tsp lemon extract
FROSTING
1/4 cup butter
1 tsp. grated lemon peel
1/4 tsp salt
2 cups powdered sugar
4 tsp lemon juice
Cream butter and sugar. Beat in egg, vanilla, and lemon. Blend in flour and coconut. Shape into walnut sized balls. Place on greased cookie sheet and flatten with fork. Bake 350 for 8-15 minutes or until edges are browned. Cool. Beat icing ingredients together and frost cooled cookies.
