Pumpkin Waffles with Maple-Apple Syrup
2 1/3 cups Bisquick baking mix
1/2 cup canned pumpkin
1 1/2 cups milk
1/4 cup vegetable oil
2 tablespoons packed brown sugar
1 teaspoon pumpkin pie spice*
2 eggs
For the Syrup:
1/2 cup maple syrup
1/4 cup frozen apple juice concentrate
Heat waffle iron and grease if necessary. Heat syrup and apple juice concentrate over medium heat, stirring occasionally, until juice concentrate is melted and mixture is warm. Keep syrup warm until serving.
Beat waffle ingredients together until smooth. Pour batter onto center of hot waffle iron. Bake until steaming stops and waffle is golden brown. Carefully remove waffle. Serve with syrup.
Makes about six 7 1/2 inch round waffles.
*if you don't have pumpkin pie spice handy, just use 1/4 teaspoon each of cinnamon, ground nutmeg and ground ginger.
