Taco Soup


I took two different taco soup recipes and combined about half of the ingredients from each to create my own version. It's one of my favorite soups, and tastes good served over fritos with some sour cream.

2 pounds ground beef
1 packet taco seasoning
2 cans ranch style beans, undrained
1 packet Hidden Valley Ranch dressing mix
1 can rotel
1 can whole kernel corn
28 ounce can diced tomatoes
1-2 cups water (depending on how soupy you like it)
16 ounce Velveeta, cubed

Brown meat and drain. Mix meat with remaining ingredients and cook over low heat.

Yummm... this sounds so good right now! If only I could find some Fritos here. I think I'll try it anyway!

This was so good on Sunday night! It is exactly the way we make it but with velveeta. Chris and I both agree that the velveeta adds so much!
