Kielbasa Black-Eyed Pea Casserole

I made this for the first time this New Year's Day and it was so good that I plan to make it an annual tradition for our family.

2 cans black-eyed peas, drained
1/2 cup chopped onion
1 small bell pepper chopped
1/4 cup cooking oil
1/4 cup vinegar (I used apple cider vinegar)
1/4 cup sugar
One package Kielbasa sausage, sliced thin
salt and pepper to taste

Put all ingredients in crock pot for 5 hours. Serve with cornbread. I actually made some rice to serve this over and recommend it because it is a bit soupy and goes well over rice.
