Oven Fried Chicken


INGREDIENTS

  • 4-6 thighs and/or drumsticks, skin removed.
  • 1 cup dried bread crumbs (I used Panko and it worked GREAT)
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1/4 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1/2 cup mayonnaise
  • 1/4 cup milk

DIRECTIONS

  1. Preheat oven to 375 degrees.
  2. In a medium bowl or gallon size resealable plastic bag, mix together the bread crumbs, garlic powder, salt, pepper, thyme and paprika.
  3. In medium bowl, whisk together mayonnaise and milk until smooth. Coat the chicken pieces with mayonnaise/milk mixture. Place chicken pieces in bowl/bag with bread crumb mixture and coat/shake until well coated. Place chicken pieces in a lightly greased 9x13 inch baking dish and bake for 45 minutes or until juices run clear.
  4. I actually placed a cookie cooling rack on top of a baking sheet and baked the chicken on that. It allowed air to get under the chicken pieces to ensure crisp baking on all sides without having to flip the chicken during cooking.
