Quick Beef and Bean Burritos


1 pound lean ground beef (or turkey)
1 can black beans, drained and rinsed
1/2 cup salsa
1 packet beef fajita seasoning
1/3 cup water
4 burrito-size flour tortillas
Shredded monterrey jack cheese
Sour cream

Brown beef in skillet. Drain fat and return to skillet. Add water and fajita seasoning. Stir to combine and heat to almost a boil. Reduce heat and cook for a few minutes until liquid is reduced. Add black beans and salsa; simmer until heated through.

Microwave tortillas until soft and pliable, about 30 seconds. Spoon sour cream onto the very center of each tortilla. Add 1/4 of the beef/bean filling to the center of each tortilla and top with desired amount of shredded cheese. Fold one side of the tortilla over and then one end at a time until burrito is completely closed.
