Balsamic Chicken Pizza

Photobucket

2 boneless, skinless chicken breasts
1/2 cup balsamic vinaigrette salad dressing
1 cup prepared pizza sauce
Fresh mozzarella cheese
Green onions
1 tsp finely chopped garlic
1 prepared pizza dough (I just used a store-bought dough)

Place chicken breasts between two sheets of wax paper or in a ziploc bag and pound to 1/2 inch thickness. Marinate the flattened breasts in the vinaigrette for at least 1 hour in the refrigerator.

Heat grill to medium-high heat and grill the breasts until just done, flipping only once (about 4-5 minutes on each side). Cut cooked chicken into strips or cubes.

Heat oven to pre-bake pizza dough according to directions on package. Or use a homemade pizza dough and heat oven to 425 degrees. Place dough on a greased cookie sheet and press to desired thickness. Bake for approximately 6-8 minutes or according to package directions for prebaking.

While dough is prebaking, chop the garlic and green onions. Slice the mozzarella cheese into 1/4 inch slices and then break into smaller pieces.

Top dough with the pizza sauce, spreading to the edges of the dough. Place toppings (chicken, garlic, green onions and cheese) on the dough in whatever order you like. Bake pizza for 5-6 minutes more until the dough is golden brown and the cheese is melted.
