Spiced Pork and Apricot Stew
I have been making large batches of this yummy stew recipe I found in a Real Simple magazine a few months ago. I freeze portions in gallon size bags to pull out when I need to take a meal to a friend. It's easy to make and I think it is delicious even though it only got 3 stars on its rating on this link. It's especially good served over jasmine rice or couscous.
